A chicken cafe built around one fire

Tallow Kitchen sits on a quiet stretch of road in Sydney, where the whole menu answers to one question: is the bird good. We roast over coals, rest it properly, and serve it with sides that earn their place on the plate.

Tallow Kitchen opened as a small counter with one roasting oven and a short menu, and has stayed that way on purpose: fewer dishes, more attention to each one.

Built for one thing

Tallow Kitchen started as a single oven and a folding sign on the footpath. The idea was plain: cook one bird well, every day, rather than a long menu cooked half-heartedly.

The name comes from the fat rendered off each roast, saved and reused in the sides, nothing wasted. Regulars on this stretch of road know the smell before they see the door.

We still cook in small batches. If we sell out of chicken, we close early. That's the whole business model.

One bird, cooked properly, is harder than it sounds.

Order at the counter

Pick a plate, a roll, or a half bird to take home.

We fire it fresh

Nothing sits under a heat lamp; each order goes to the oven or the pass as it's called.

Sit, or walk out with it

Grab a table by the window or take the lot back to the office.

Do you take bookings?

We hold a few tables for groups of six or more; everything else is first in, first served.

Is there parking nearby?

Street parking runs along the road out front, plus a public car park two minutes' walk east.

Can I order a whole bird to take home?

Yes, whole and half birds are available all day, boxed and ready in under ten minutes.

Is the space wheelchair accessible?

The entrance is level with the footpath and tables are spaced for easy wheelchair access.

What makes your chicken different?

One oven, one cooking method, and a short menu built entirely around getting that one thing right.
